Smoked Chicken/Spinach Enchiladas

Cooked a Chicken in the Big Easy Wed, then shredded the meat and folded in some Cream Cheese, Spinach, and Red Onion.

Rolled them in Corn Tortillas dredged in Hatch Green Chili Enchilada sauce and topped with some shredded cheese, and let the rest of the magic happen in the oven!
