Beef taco recipe specific recipe search...help?

I am searched out, so maybe some help is in order.

There was a post from a year or two ago. Substantial sized thread for a while, possibly a regular contributor. Thought I had it saved.

It was phenomenal. Poster had Chucks, put them in an aluminum pan. The right veggies, the right spices, the right liquid. Throw it in the smoker, cook, shred, and done. It was one-pan cooking perfection.

Figured I would inquire in case someone else also uses (or obsesses) over this recipe. Wanting to throw a taco night for some friends, and I've been trying to locate this method...no luck!

Any help?
 
Well, Pepper Stout Beef is the standard for pulled chuck with veggies...but that's not really a Mexican/taco spin.

Also search for barbacoa, and see if that gives you what you are looking for!
 
Technically, anything in a tortilla is a taco.

Out here, the preferred cut of beef is flap meat (or skirt) for carne asada.

I have used chuck, but that's usually called carne deshebrada (pulled/torn meat). In either case, the meat is seasoned before cooking.

I would suggest dry rubbing both with the spices in TonyBel's carne asada recipe.

For the flap meat/skirt steak, I would do those in the grill.

The chuck would be smoked, then braised in a bath of white/red onion, red and green bell peppers, beer, orange juice, and lime juice.
 
Pepper stout beef was the first thing that came to mind based on your description.

Good responses. And appreciated. I'm from South Texas, and no novice on either cooking or tacos, but this method just nailed it, which is why I thought I would ask. Hoping that I wasn't the only one that tried it and loved it.

Needle in a haystack, I know, because we regularly discuss some form of "taco", "barbacoa", "pulled beef", "shredded beef", or "chuckie" on this board.
 
I don't know if this is exactly what you were looking for, but SteveKing's Barbacoa Recipe from a post back in 2016 is frickin' delicious... every time.

He's not reinventing the wheel or anything. Fairly common ingredients going into that recipe, but THAT is exactly what I was looking for.

Thanks for helping me take the guesswork out of recreating it. So amazing what a community this forum is...
