Default Prime Brisket

Hey Brethren,
I bought a Prime Brisket last Saturday. How long can it stay in the bottom of my fridge?? I plan to smoke it this coming Friday night.

As long as the cryo is well sealed you’ll be fine. Lots of guys wet age a brisket for a month.

Concur - if cryo-seal intact then wouldn’t even blink about till 4wks.... I like to hold them at least 2wks to wet age when I can...

I did a lot of research on this as I just wet-aged a prime brisket...the consensus is 28 days max from case date is safest.

That's my limit for cryo vac'd briskets too. Usually two weeks is my preference but just a personal opinion.
