Looking for some new ides for the exotic category in cookoff, traditionally we have always done bacon wrapped shrimp and done ok, looking for something different.
 
As long as its some kind of meat or seafood, it qualifies for the exotic category
 
I've Done well with Stuffed Flounder the few times i entered it at MIM. Cornbread stuffing with crab and crayfish covered with smoked guda cheese. Just split the flounder right down the middle.
 
Asian Markets have caiman legs sometimes, generally with feet still attached (makes a great "handle"). Grill 'em up and call 'em "Dragon Legs".
 
How about Chinese Siu Yuk (crispy pork belly) or Char Siu (roasted/ BBQ-ed belly).

These links often talk about indoor cooking, but they are easily adapted to outdoor equipment.

Siu Yuk is my favorite of the two. But that last Char Siu recipe is great!

I've eaten it before, and it's great when cooked properly: very easy to dry out and tough when not.

Bunnies, however, are on my No Cook List issued by my wife. :razz:
