Corn on the cob

Sorry if this is the same ole' but I shuck the corn, put on a sheet of foil, add salt, pepper and some butter. Wrap the foil and put it on the smoker while we are resting the meat. Pull off after 45 mins or so and serve with the meat.
Although today we are going to pull the husks down but leave attached, remove the silk and add the salt, pepper, and butter, then pull the husks back up and put on the smoker. No foil. We're hoping the smoke will get into the corn a bit and change the flavor.

This is a recipe my family loves.
Shuck the corn, then brush with olive oil and salt and pepper. Grill the corn until done. While grilling, make a aioli using mayo (Dukes of course), garlic, S & P and zest and juice of a lime. Once the corn comes off the grill and while still hot, brush with the aioli. (It will soak in). It’s delicious like this, but sometimes we add feta cheese on top as well. |

Soften some butter, mix in some parmesan cheese and some basil, spread it on and grill

I leave the silk and husks as they are, and grill the corn.
When done cut the ear as they do here in the video and the silk and husks will slide off in one piece. You can then coat with, butter, olive oil, cheese, ect, whatever you desire and grill for another minute just to add some char marks for flavor and appearance. https://www.youtube.com/watch?v=exFgVErLYWA |

Butter, garlic chunks, parm cheese, wrap in foil.. toss it in... simple as that....
Kept in the smoker for a few hours at 225 while waiting for ribs and fish. Eat it as it is, or after toss some tapatio and more parm. |

It's a great year for corn so far. The early stuff from Florida has been very very good. I usually don't bother until the local stuff comes in in July through Labor Day, but I tried some this year and it's worth it.
I like to just boil it and make a compound butter. Lime, chili powder, cumin, anything works.

I generally shuck the corn, brush with olive oil, salt and pepper and grill until lightly browned on all sides (8 minutes or so over medium heat).
Another great option is to take the corn off of the cob, and saute it in a skillet with melted butter, salt and pepper, until the kernels start to brown a bit. I started using this method when my son had braces and couldn't eat it off the cob. It's so good, I still use this method sometimes.

If you just server it-they always love it. |
