Flank steak using my brisket rub. Zucchini fritters. Weber kettle, vortex'd, for the steaks and Lodge CI for the fritters. 5 grams of carbs per plate. I did have two plates :0 We LOVE chimichurri.

And I'm with you: chimichurri is so darn good and really verstale.

Looks great, please share the zucchini recipe.
2'ish pounds of fritters grated like cheese. Squeeze the zuchinni in cheese cloth to remove as much moisture as possible. Helps to squeeze, salt, let sit and squeeze again.

Add to the zuchinni:

1 egg
1/4 cup parmesan cheese
1/2 tsp salt
2 cloves of garlic, minced
1/2 cup of Carbquick (you can use almond flour but we prefer Carbquick slightly)

Pan fry in veg oil about 3 minutes a side. Careful as they are a little soft when turning.

You can also add in Italian seasonings, more cheese, etc.... but I would eat it as prescribed above to get the "taste". Reminds me of fried dandelions.

Great with ranch style dipping sauces.
 
I'll have to give those fritters a shot. We've been tinkering with Keto for a few months. It was the best diet I could find for my traveling, luckily wings and bourbon are keto friendly!
 
Thanks all. The second steak is being used for tacos tomorrow.

My wife is liking the flanks enough that we may free up the budget more. We usually have Ribeyes once a week.
