Yeah, I just cannot relate to that method shown by Bon Appetit. At all. Sorry not sorry.

The Night Train post is probably the single greatest achievement in the brethren forums.

People braise meats all the time. I didn't see them reference this being bbq or better than bbq anywhere in the article, unless I missed it. Looks good to me. Corned beef is boiled/braised and it is awesome.

I dated a Jewish girl a few years back.. she took me back to her mom's house in Wisconsin (Browns vs GB weekend) and said brisket was on the menu for dinner. Man, was I ever surprised with the pot roast that was laid before me. I ate most of the sides and tried to hide the brisket underneath the bread.
