Default Labor Day M1 Brisket

Small prime brisket from Costco, put on the M1 with oak at around 730am. Wrapped after about 6hrs when the bark was to my liking then another 2 in foil. Rested in the cooler until dinner at my in-laws





Pretty warm in the PNW lately so tending the M1 had me sweating but it ran steady ~250-275 with a small split every hour or so. Love it

Bro in law made some ribs on his traeger and sister in law made a delicious watermelon and spinach salad as well as a shaved asparagus and persimmon salad to cut the fatty meats

Excellent Labor Day meal with the fam

The more I see from that M1 the more I like it. Great looking brisket right there.
