Default Ribs on new Hanging Rack

I decided to break out my new Hanging Rack for my WSM 18 with a rack of ribs. First time hanging food and it was a challenge. My heat got too high. I dropped a piece in the fire (upper right). Ribs were done in 2 hours. Ribs are resting in foil, now. I did try the bottom 2 bones and they were good, but a little bit charred.

At least I know what not to do the next time. Live and learn.

The hanging kit and lid hinge were the 2 best accessories I purchased for the 18.5. Hang some chicken halves, you will never smoke a chicken any other way again.

These were done on my new Drum but you will get the same results



So tender you can pull the breast bone and ribs away from the breast and serve it boneless.



I prefer the quarter and wing.



I like hanging Pork Loins too.
