Default Wing Glaze

I am thinking about a couple of whole chickens on the PBC this afternoon, and I also want to add a grate of wings. I will use Yardbird seasoning, but I would like to put some kind of glaze on them. Any suggestions form the Brethren? I nor my family care for really spicy food, so bear that in mind. Thanks in advance!

I like to make a glaze from approx 18oz orange marmalade, 18oz whole berry cranberry sauce, 1/8 cup whiskey (originally a blended highland Scotch), cinnamon, cloves, 1 tsp lemon juice, zest of 1-2 oranges.

Warm over low-medium heat, stirring often until well combined. - This'll get you a decent batch that you can save and dole out a few times.

Toss cooked wings in approx 1/4-1/2 cup of the glaze until well coated. (warmed... may want to put the glaze in a pan/skillet to warm it up if starting from cold)

Hope that'll give you some ideas or kick you in the right direction.

After glazing, you don't put them back on the coals?

I don't, but that's me. If anything, I'd consider a very indirect heat to help the glaze set, but I don't want to burn the high amount of sugar in the glaze.

I see this was yesterday but my favorite wing sauce is Patio Daddio's Finger Stickin' Chicken Sauce! I too do not like things really hot....give it a try.

Use the forum custom search at the bottom of page for recipe.

I made a pretty sweet glaze with red plum jelly, a dash of lemon juice and Dale's, and some ground ginger. It wasn't too bad. They went fast!
