Trying my second Pig butt on my modified offset. I'm using this to document how the cook goes.

Watched Franklin do a pork butt and trying to replicate that. My first butt was actually a picnic and I dried that sucker out.

5lb Boston butt
Rub
1/2 salt
1/2 pepper
Garlic and onion powder
Paprika


Wood
Live oak from the pops in law (probably a little too green)
Hickory from Lowe's

Start cook time 9:05am

Need to get better thermometers. Planning on adding a mod to put two near grate level.

Also one of those digital one I can shoot at the grates to check the temp.
 
1100. Just getting back to stable. Problem was let fire die down too much and neighbor wanted to see the meat. Opened the cooker and fire down cause big temp swing. He wants to throw on a slab of ribs now too.

I'm doing two PB's today. My wife said earlier this morning that I smelled like smoke. Now she say's that I smell like food!

Temps are at 180 and slowly rising. :thumb:

Lol! Gotta love smelling like smoky pork goodness! Best of luck brother!
 
Pulled her off after 4.5 hrs. A little early but she had a lot of smoke from my swings and rain is coming. Desperately need a shower too.

In the over for 3-3.5 hrs.
