According to the always reliable Wikipedia:
Parchment paper: Modern parchment paper is made by running sheets of paper pulp through a bath of sulfuric acid (a method similar to how tracing paper is made) or sometimes zinc chloride. This process partially dissolves or gelatinizes the paper. This treatment forms a sulfurized cross-linked material with high density, stability, and heat resistance, and low surface energy—thereby imparting good non-stick or release properties. The treated paper has an appearance similar to that of traditional parchment, and because of its stability is sometimes used for legal purposes where traditional parchment was used. Butcher paper: Butcher paper is a kraft paper. Originally sold to butchers for the purpose of wrapping meat and fish, butcher paper is now used for a wide variety of purposes, notably in primary education where it is used for arts and crafts, such as hanging artwork. Many high schools use butcher paper for posters of clubs, and upcoming events. It is a cheap but sturdy paper that is sold in large rolls. Butcher paper is usually white or reddish in colour, made from kraft pulp and is generally considered to have a density of between 30 lb/3000 sq ft (45 g/m2) and 50 lb/3000 sq ft (81 g/m2). Moving companies use butchers paper to pack china, glass, and other fragile items for safe transport. The use of printed paper, such as newspaper, could transfer ink onto the packaged item causing damage.

I've used both - Butcher paper holds up a lil better when wet from drippings -in my experiences.
