Brisket I seasoned Tuesday night with Oakridge Santa Maria, Rosemary, course pepper, and olive oil..... wrapped nice and tight with Saran Wrap. Cooked on a WCS with pecan and alittle hickory for 15.5 hours.... would have wrapped at the end in Beef Broth and cooler for couple hours. But ran out of time.
