I know I haven't posted much lately, it has been super busy for me. I am still cooking and here is some of the things I have done and also received between Christmas through Winter Storm Helena.
Christmas brisket (it was select as that was the only thing I could find without having to drive to Va Beach). I cooked it at 275 on my uds with maple wood. It went unwrapped the entire time.
It sat in the cambro for approx 5 hours for dinner. While it sat and rested, we got to open presents and my fiance got me this little guy!
Finally time for dinner. Here is the brisket sliced up with my sweet TMNT shirt I got for Christmas and also some festive headwear.
My first thing I did with the Redbox smoker was give it a light workout smoking cheese. I used my A-Maze-N sawdust smoke generator. Kroger had a sale on Red Wax gouda for $2.99/lb so I got 5 wedges of that. Also did 5 blocks of Kraft sharp cheddar, mild cheddar, and habanero/jalapeno jack cheese which was onsale for $1.50/block
Last weekend Winter Storm Helena decided to pay us a visit. We normally don't get snow so the area shut down since we got 12-14inches.
Some scratch made biscuits I made for breakfast.
My thick but bacon, fried egg, and Irish white cheddar cheese biscuit and a biscuit with honey. Need some savory and some sweet for breakfast!
After breakfast I went and shoveled some snow. Pitmaster priorities!
Smoked up a couple 2lb fatties. One was nekkid the other was rubbed with Oakridge Dominator and Stubbs Chile Lime. Smoke with maple at 325.
Later that night my fiance and I decided to play with the pasta roller attachment for the Kitchen Aid we got for Christmas. So we planted a pasta tree! Some papardelle pasta that we put in the fridge to be used this week.
Some dog tax. This is my boy Weber looking majestic AF in the snow.
