I have been wanting to make THIS recipe for a while now, and what better time than for the Norcal Bash yesterday?

The recipe called for pork loin, but I used country style ribs instead, more flavor IMO. Just a light coat of Santa Maria seasoning, and onto the Lg BGE.

After a couple hours, I pulled them off, and they hit the fridge for tomorrow.

Since I had a cooker fired up, I finally got to try THIS recipe, simple and delicious.

I got up Sunday morning, and started making the Chile Colorado. Got it on the stove, just before kickoff (GO PACK GO!).

Here it is after 3 hrs simmer, I served it with grilled flour tortillas. I gotta say, it was delicious.

That looks fantastic. I make it very similar to this except I add a small can of hominy and a couple chopped taters.

Would it bother you if I ate a bowl with buttered corn tortillas, not a deal breaker:)

Looks like I'll need to get to Safeway in Pleasanton next weekend, they're doing another burn in the parking lot. I loved this recipe, gotta pick up another case of Hatch I think.
 
Hatch starting to get cheap here. $5 Case for Younguns and Melissa brand.
