Default French Dip and tomatoes

Haven't posted in awhile so I'll throw this out there. Nice easy meal but delicious. Started with eye of round seasoned with SPOG.

Cooked on the 640 for 2hrs at 225 to IT of 120. Pulled off and quick seared on gasser.

Sautéed some onions

Sliced the meat nice and red

Next I put together the sandwich. I make some au jus and dunk the meat in first then put on roll. Toasted roll with horseradish sauce, provolone cheese, meat and onions.
On the side I took fresh tomatoes from the garden and sliced them thin. Made up a cheese topping which is insanely good
1/2 cup grated parm/Romano mix
1/2 cup shredded mozz
1/2 cup ricotta
1/2 cup mayo
1 garlic clove minced
1TBS oregeno
1ts salt
Mix all that up good and put a thin layer on the tomatoes. Broil 3-5 mins till cheese browns. I could eat these all day
