My wife found whole corned beef flats at BJs, so today is pastrami day. I took off about 3 lbs for a corned beef dinner, and this is around 8 lbs going on for a nice long smoke with pecan and apple.

Here's the finished pastrami. The bark came out great.

And a fresh loaf of rye bread.
