Got a 13# Select Packer yesterday for $1.99/lb.

I used SPOG for a rub.

Fired up the WSM with Kingsford Mesquite.
I don't use any extra wood chunks with mesquite charcoal.

Put it on around midnight, grate temp ~300F.

I overslept... jumped out of bed and ran out back @ 0800 and the brisket looked awesome. It had a very dark bark and probed tender :clap2:

Wrapped in butcher paper and into the cooler for 4 hours.

Just a brisket, and just a great looking brisket.
One of the reasons I'm tempted at a WSM.
 
that is an awesome brisket and you are one lucky farker. :becky: although there is someone around here who regularly sleep-cooks and seems to get away with it too.:heh:
 
The only thing that I can see that would improve that brisket, would be if it were on MY plate along with some of the wife's tater salad, and some baked beans. You nailed it my friend. Great job!

That looks delicious.

One great thing about BBQ, you can have the best laid plans, screw them up and still come out okay.

So nice to see brisket under $2 a pound.
 
I did a brisket once...not anywhere near as delicious looking as yours! Congrats on the brisket and the good night's sleep too!
 
Looks great, I'm wanting to try my first brisket on my WSM. How much (if any) water did you have in your pan?
