Decide Monday to take out a pair of pork butts from the freezer to cook today. I got up this morning at 8 and started the fire in my Akorn. As it came up to temp. I prepared the pork with salt, pepper, and a rub called Larry's Rib rub, it is great on any pork. I put them on when I hit TBS and the dome therm hit 300. I figure I am cooking around 340-360, I am not using my maverick or heatermeter on this one just going to let things do what they may and see how it goes., I am using my Tip Top Temp device to help regulate temp some. Here is a pic of them about 30 minutes into the cook when the new batteries arrived.
