Tear 'em up, Phu! That sounds awesome.

Momma's been on my case since we RTB to Okinawa about smoking a brisket. Next thing I know, my mentor (and boss) decides that he's smoking a brisket this weekend. Guess what Shadow's smoking... a brisket (albeit rather small, and expensive)... a couple of nekkid fatties, and I've got some Mexican Chorizo, bacon, and cream cheese to fire up some pork shots.

I'm sure I'll muck-up QTalk with a post in a day or so. Hope you folks have some inspired cooks with great ideas.

Kind regards,
Shadow

Happy Priday Phu! No smoke this weekend, but I'm rebuilding my UDS with a new unlined drum I got from Shenco and cutting out the centre of the old one to use as a roti ring for my kettle.

Happy Phriday, Phu! Lamb sounds great. I've got some shoulder chops in the freezer that might have to find their way onto the grill. Other than that, chicken quarters and maybe some CSRs.

I have one pork butt left in the freezer so it's going on the PBC Sunday. The only rub I have around is PBC's beef and game rub. I don't think it would hurt putting it on pork

Going camping this weekend, so we will have a plethora of campfire grilled foods. We will also be using the dutch oven for various items.

Canadian Turkey day for us this weekend, so I'll be attempting to hang a 14lb bird in the 18" WSM. Wish me luck!
