Default First Pork Belly Smoke

Well, it's been on the list for a while now. Picked up a 10.55# belly at Costco yesterday. Cut it into 1/3's, got 2 of them in the fridge curing for bacon. Put the other piece on the UDS today. Here's how it looks after 2 hours. Cooking at 325*. Hope it comes out as good as others I have seen here.

What is in the bottom of that pan? I see onions, is that carrots & celery as well?

My Costco has just recently been keeping them on hand. This is the 1st one I've picked up from them. They have also had Prime packers consistently. I have been enjoying that!!!

Looking mighty good. Mine from last night never got to become tacos but it got vac sealed and is going into the sous vide right now. I did mine on the grate over a half pan with beer in it between 250*-325*. I took some samples last night and all I gotta say is Ooooo Dang!
