Chicken thighs, hatch chiles.....woop enchiladas
Smoked a bunch of thighs on the Chubby yesterday. Pulled them then made red and green enchiladas. Topped those with fresh made hatch chile sauce and a couple of jalapenos. Home grown tomatoes and seasonal fruit. Had to have a Mazzocco Zin just to keep my life in balance. Landarc taught me about this :)
