Brisket on the Deep South GC28
I picked up a really nice choice grade brisket from Restaurant Depot this weekend. Took advantage of that and used it for a comp practice cook.
I trimmed it up and injected the night before. After applying a light coat of rub, it went into the refrigerator for the night. Cooked low and slow the next morning on the Deep South GC28 then cranked the temp up after I foiled. Results were fantastic!

That's a nice brisket. Turned out really good too! Not that it counts but that is an impressive smoke ring.

Nailed that cook, the smoke penetration for that smoke ring is pretty indeed. 10 more days left until I pick my GC28 and trailer up from Randal.
