Default Bachelor Dinner (pron)

So my wife said those magical words Sunday. "You're on your own for dinner Wednesday." Since then I've been planning this quesadilla.

I started with a chicken breast dusted with seasoning salt and chipotle powder.

Then I added some green pepper and jalapeno

While that was cooking, I started sauteing onion and corn

Back to the chicken to glaze with a bourbon apple sriracha glaze

Chopped the peppers and added them to the saute

Tossed it all onto a tortilla with a generous helping of cheese

Plated with home made guacamole, sour cream, and salsa

Thanks for looking and sorry about the bad pics!

Sorry, this made me laugh, it looks great, but "Since then I've been planning this quesadilla." is funny.

Usually when my wife is gone I grill up a steak, a cornish hen or drink too much and skip dinner. But, that quesadilla looks good, neighbor!

Funny, when I do a cook for myself like this, I some how usually cook more than I do when it is for the two of us.

Looks good...
There are thousands of ways to BBQ. The right way is the one that you enjoy doing, and that produces food that you, your family, and your friends enjoy to eat. So, keep experimenting. :)
