Having a little get together at the bar tonight. Someone else was assigned the grilling duties, so I figured I'd bring some appetizers. Had some Hawaiian style Pulled Pork in the freezer, so decided to make some pig shots with the pulled pork in the filling. Pork, pork, and more pork... :)

Made up the shot glasses by wrapping half a piece of bacon around a slice of sausage. A tray of shots and all the filling ingredients shown here. Check the date on the package.

Mixed the filling together. Tasted good, but the pork made it a little dirtier looking than last time I made these without it.

Made up two trays worth. I could have done two levels on the smoker, but I didn't want the grease from one dripping on the other. So this is on the smoker with a chunk of Cherry wood...

And this is on the gasser with a couple smoke bombs (foil wrapped wood chips) with slivers of Cherry wood.

What are the red dots you finished it with? BBQ sauce?

Looks great Thoey. Gotta give these a try but my own twist of course... i.e. wrapped in some sort of dough.
 
I made a batch with Andouille Sausage as the base, with a slice of jalapeño hidden under the herbed cream cheese and dusted with dry rub. Yours make mine look like amateur hour!

Hadn't thought about the peppered bacon (that it looks like you're using) option before...
Do you mix the sour cream into the Philly to soften it up? I typically just pop mine in the microwave for about 25 sec on 30% to soften a little before I throw it in a plastic bag (cheap/easy substitute for a pastry bag)...

Hadn't planned on smoking today, but you're making me reconsider.

Yeah, I dotted the plated ones with a little Stubbs Spicy. I was going to all of them, but then I ended up stacking them in a pyramid to plate and decided against it. Just brought the squeeze bottle in case someone wants it. It really isnt needed.

Yeah, I used the thick, peppered bacon, half a slice each. And yes, the sour cream thins the cream cheese a little. Makes it easier to squirt from the redneck piping bag (ziplock with corner cut).
 
Thanks y'all and thanks to whoever created these little bundles of joy. Had several people asking for the recipe. I made 84 of them. The guy for the bar grilled a bunch of burgers and dogs (slacker). I'd see people walk over, grab a plate, survey the offerings, grab three or four shots and walk away. They went quick...
 
Thanks MC. Go for it. That's how I got the general idea and then just got creative with the filling...
