Made Yakitori chicken today and followed Mildos recipe...

Oh, snap! That looks tasty. I'll bet if I make some of that, momma might forget about Family Mart, Coco de Cook, and Lawson's (all Japanese convenience stores that serve some pretty damned good Chicken Yakitori) out here in Okinawa.

I dig the bed of greens, too... Usually it's just "meat on a stick" out here, but that looks mildly healthy.

I also like those rails for the skewers! Do you just pound the chicken flat and fold it over while putting on the skewers?

It's boneless thighs cut into 1 inch cubes. Some were folded in.

Skewers are a the ones that weber sells. Rails are angle irons. I have a friend that has access to a metal shop.

No pounding. Just cut them into small pieces. 1 inch cubes. Some where folded in cause of their size.
