Default First Reverse Sear, Cowboy Steak(Pron)

The wife was out so I thought I would pick up a nice cowboy steak from the local butcher and try a reverse sear. Hit it with some SM Peppered Cow then I smoked at 250 till the internal read 110. I threw it on the gasser sear station 1 minute a side then let it rest about 10 minutes. I over shot a bit but it came out awesome! Definitely need more practice but I loved it!

Off the smoker:

After searing on the gasser:

Being destroyed by me. Yeah I had just steak last night. No sides just steak. I'm a man!

Dammit man, I was looking forward to the wings I got marinating... Ruined that for me.

Don't know why you say you overshot... Looks about perfect to me.

You don't want to fill up on veggies and such when you have a nice piece of meat to eat first.
