Default Help with meal -- Jerk Chicken and seafood paella

About a year ago my wife and I went to Grand Palladium resort in Jamaica and had the best Jerk Chicken and seafood paella at the shack on the beach. I really want to try to recreate it.

Based on my research here i'm going to try the "Walkerswood Jerk Seasoning" and "Phrasty" but I need a good Paella recipe, can anyone help me out?

Also, does anyone know what the mild red sauce would be? They had a red mild sauce and then a darker red almost brown sauce that was hot!

here is a photo (not our photo) of the plate LINK

The paella cook who's work on this forum that I really enjoy is R2egg2Q, search out some of his posts. MartyLeach also makes a mean paella.
