I picked up a brisket to smoke for tomorrow and I am thinking about trying to run it Hot and Fast wrapped in butcher paper that just got delivered today.

My main question is that I also picked up a small rack of Beef Back Ribs.

Any advise if I try to have them in there at 325-350? Should I wrap them in butcher paper? Any idea of how long?

you're good to go at that temp. i've done em there before. i suppose if the outside starts to look REALLY charred, go ahead and wrap.

Yeah, keep an eye on them. Beef backs can go from looking good to hockey puck in the blink of an eye.

The last few batches of beef ribs I have cooked were fairly meaty. 225 for about 5 hours.
