Howdy...

Had a nice Catering gig for more than 120 people yesterday at a company anniversary.
It was 400 miles from my place so i prepped most of the stuff at home and made damn sure i didnt forget anything.
Turned out pretty good, we served 18 different foods from the smokers, grills and dutch ovens.

300 cream cheese and bacon wrapped dates
300 MOINK Balls
40 tortilla wraps with grilled pineapple, brats, arugula and honey mustard sauce
120 Wings with maple syrup glaze
20 pork tenderloinswrapped in serrano ham with mafia coffee and parmesan
200 shrimp/tomato skewers
30 racks of babybacks
5 pork neck roasts
5 pork loin roasts with rum, chili and peach glaze
4 beef loin roasts with garlic, rosemary and sea salt
2 turkey breasts with tequila sunrise marinade
10 cedar planked salmon filet with honey lime dressing
40 cedar planked red snapper filets with toscana rub
3 14" Dutch ovens with au gratin potatoes
roasted chipotle butter ciabattas
mediterranean salad buffed
griddle roasted vegetables
lots of different breads

For desert we grilled some rum marinated pineapple and
served that with different ice creams and pina colada cream.
