Looks wonderful. I haven't played around with the old Char-Griller since getting the WSM. Think it's about time to take her out of the shed and get 'er dirty.

Looks great! Maybe stupid question...Do you add anything when you wrap them or just let the foil do the work?
 
I have the same mods on my Char-Griller. Charcoal basket & braided gasket. Still hard to keep temps steady for long slow cooks. Not to mention having to empty the ash pan like 3 times and keep adding lit charcoal to keep it going. Even after all that I still really like my CG. But soon I'm getting a Kamado Joe to make long cooks super easy. Can't wait. Oh

I do not add anything, wait till you see the next pics.... the juice is unbelievable.

Ribs and pork butt I add apple juice when I wrap them but not beef.

In response to your comment... In a 7 hour cook today I adjusted my vents twice only added 2 sticks of wood cause that is all I had...lol And I added lump one time.

Now prior to Thursday when I was using nothing but wood I could not keep a temp for more then 15 minutes and bbqing was really hard work. Today I stayed in the house, made my potato salad, watched tv, and had a great day. I checked the temp like every 30 minutes but other then that it was so enjoyable.
