I was just wondering if cooked brisket freezes well or not. I know that pulled pork does if you vacuum seal it. Any thoughts on this?

Same thing for brisket. Freeze in vacuum sealed bags and pull out as needed.

I usually slice the Brisket it up and vacuum pack it. I do usually keep the Point whole and vacuum it but when I use it I cube it up for chili.

Absolutely, Treat it just like pork, vac seal it with a little juice in the bag, and toss the bag in some boiling water for 15-20 minutes when your ready to eat.

That's the plan right there!

Only thing I do different is turn the heat down to a high simmer and not a full boil.
Had a couple of bags rupture when "boiling" and wound up with "rib soup"
