Any Southern Cal brethren know when I can buy food grade brown butcher paper? I have been to Costco, Sams Club and Restaurant Depot and they only carry the white one.

I want to wrap my briskets and using the bleached stuff makes me nervous. Can I just parchment paper instead?

I'm also going to try parchment paper for wrapping for today's cook. What are y'all's strategy for holding butcher/parchment paper in place? A toothpick?
 
I was just going to tuck the ends on the bottom with the fat side down.
 
When I portion out my ground chuck I put it in butcher's paper and use butcher's tape.
Works nice.

Brown butcher paper is the same as kraft paper sold at hobby and craft stores. It is used in schools for projects due to cost savings. Info courtesy of Wikipedia.
