...but can anyone tell me anything about the big green egg? is there a distinct difference in the final product as far as moistness? also, what about the websites claim that it will pay for itself in charcoal efficency? how do you access the fire in it? what about a comparison to metal smokers? thanks.

yup.. Uncle Ray is the man to answer this.

But from my limited experience it runs very efficient once the ceramic is heated up with a small amount of lump with small chunks of wood. Uses a small pan of water as a damper/drip catch if you want. Takes a while to respond to damper controls and a long time to loose heat if u need to. Capacity is limited. Its a dream cooker for low volume low/maintance cooking. If your looking into it, look at the kamodo cooker also. There are comparison charts on there web site too.
