Default Kippered beef recipe or process

A local meat market used to have kippered beef. It was like jerky but thicker and more moist. They are long gone now but my hankering for it isn't. I found one 5 yr old thread on here discussing it. Any of the brethren made this before? Any recipes or process thoughts that you would care to share?
