Default Scottched eggs cooking time?

I'm wanting to try my first go at these tasty looking jewels. Just wondering how long I need to smoke them for and does anyone have a go to dipping sauce with these. Thanks in advance.

I run mine until I can slid a thermo into the sausage layer & get 160*.
