Competition BBQ season is still a few months away in the northeast, but practice continues year round.

Here's a 10# Bone in Boston Butt

Trimmed for a neat presentation of sliced 'money muscle'

Fat cap removed for better bark

Injected and marinated (Family Secret)

Rubbed (Simply Marvelous)

Spritzed

165 and ready for foil

foiled

195 and done

Sliced and diced. Amazing flavor and tenderness. A little thick on the sauce, but I'll deal with that on my next practice session. Thanks for looking.
