Making Fruit Powder

Hi!

I'd like to make fruit powder to add to rubs, but I don't have a dehydrator. Has anyone had any success drying fruit to the point that it can be powdered in your oven?

I just baked thinly sliced apples at 175 for 4.5 hours. No good. Too malleable. Too much moisture left.

Any thoughts?

Even with a dehydrator it'll take longer than 4.5 hours-depending on how thick the slices are. I'd say let them go longer, they will eventually dry out, I just can't say when. Quick question-are you drying them on a pan, or do you have them on a rack to let air circulate around them.
 
I have them on a cooling rack that is propped over an empty dish. It lets the air circulate and the dish catches the drippings (if any).

Maybe I'll try tomorrow for 6 or 7 hours.

Actually, now that they have gotten a head start on drying, you might just want to leave them out overnight. They may be dry and crispy in the morning.
 
Do you have a box fan and some furnace filters? AB did this on a show. Put the fruit between two filters and bunge cord the filters to the fan.
 
We put dried cherry's in a dehydrator and it never did get dry enough to grind into powder. It kept gumming up in the grinder.
