Smoked Chicken - A Test
(Seems like chicken is popular this weekend)
So a bit of background first. My FIL (rest his soul) used to always do the turkey on Thanksgiving. He had a secret marinade he did for 24 hours then smoked it in his Brinkmann electric smoker. It's a very tasty recipe and was always a hit. Shortly before he passed he gave the recipe to his son & daughter (my wife). I've done it a few times now using my GSM propane smoker. Since I got a BGE my wife and I decide to do a test run to see how a "real" smoker will affect the taste. The reason for this is because the marinade used liquid smoke (a lot). So I'm doing one chicken wit' and one chicken wit' out. After the taste test I'll pull both for club sandwiches with home-made potato chips and save the rest for chicken chili verde enchiladas later in the week. So without further ado, I present Paco and his buddy Javier....

OK, blind taste test. The one with the liquid smoke had the more "familiar" taste. It wasn't over-powering in the sense that the real smoke combined was too much.
The one without the liquid smoke definitely had a different taste. Essentially you could clearly taste all the other marinade ingredients without the liquid smoke masking those flavors. Wife said they tasted the same. So either I'll stick with her Dad's original recipe, but no extra wood chunks in the egg or I'll come up with a completely different recipe.

Cool thread! It's interesting how the Liquid Smoke affects the other flavors. So, which version did you like better? BTW, the Chicken Head is totally awesome, I need to find a couple for myself.

I actually preferred the one with the liquid smoke.
The other flavors just don't seem right without it. However, it was a good lesson in how much that stuff masks other flavors. The whole recipe is really a savory mix for a turkey. I personally wouldn't do another chicken this way.
