Im looking for a good Caribbean styler curry powder recipe. Or maybe a commercial one.
 
haha i seen that thread.. I bet thats what sparked it.

I made some good jerk last night.. loved it.
 
Sup brother, It's hard to really nail caribbean curry. I choose the easy route and use this:

Oh, make it fresh it is much better.

It is basically a garam masala with the addition of allspice.

GOt this recipe from an old Jamaican cook. She is gone now but I was lucky enough to inherit this.

Get a pan hot of med-high heat.

Then drop in"

6 table spoons of cumin seeds
1 teaspoon of cloves
1 Cinnamon stick
1 teaspoon of black pepper corns. (or more to taste)
1 tablespoon of fenugreek seeds
2 bay leaves
6-8 cardamom seeds
2 star anise seeds
1 tablespoon turmeric powder
1 grated nutmeg
1 tablespoon coriander seeds
1 tablespoon allspice berries

Toss this into the pan stirring constantly till it gets a little raosty toasty.

Then put it into a coffee grinder (one that is dedicated to spices) dont use the one you use for coffee and grind it fine.

Or bust out the mortar and pestle and grind it up for an hour or two.

Great stuff.

I'll try both, Fresh is better. But where to get the spices at?
 
Most Caribbean shops I've been in carry curries from the islands.

I will say...curry dishes from Trinidad are much better, in my opinion, than curry dishes from Jamaica. Alot of that has to do with the curry they use to season...the rest lies in the sweet hand of those Trini cooks.
 
Look for Indian stores, they are usually stocked up with very inexpensive high quality whole spices. They will have everything on that ingredient list.

Ill have to agree with cook, Trini food is awesome. Thats what I usually use the curry powder above for. I love making Doubles, havent tried making the roti though. I would love to make those sandwiches at home.

Ill bet the difference is that Trini cooks wont use a spice mix from a jar, they make their own, more Jamaican restaurants just use the jar.

Now, how to make a bake-n-shark?
