Default First brisket flat on my UDS

Got a nice 7 pound flat at Sam's (no packers available). Trimmed her up and seasoned with Montreal Steak seasoning. Cooked her a little on the hot side (300) with hickory and apple. 2 bottles of red later and she was done. Was definitely the best to date, all of which had been smoked in my recently retired Masterbuilt. Bark was better than my last one but still not where I want it. Forgot to get the bark shot so I took it the next day (most of it was eaten then)......

The pic of the potatoes was from a magazine I read while smoking.....Cook's Illustrated.....recipe for potato wedges covered in panko and parmesan cheese, fried and served with ranch. Man, they look good.....
