Happy Independence Day, Folks!

CINCHOUSE gave me permission to fire up the smoker and throw on a rack of ribs to go with some collard greens, and whatever else she puts together.

Also, going out on a limb, the US sure didn't establish its independence by going it solo! We needed help, and the French came through for us.

My tip of the hat to our fellow revolutionaries is this:

Parsley, Shallot, Garlic

Turned into a compound butter with some S, P, a pinch of nutmeg, and some dry white wine

The overall plan:

Pipe a bit of the compound butter in some sterilized shells, then stuff an escargot in.

Fill the rest of the shell with the compound butter.

Fired up the smoker a tad late, but decided an appropriate cider would be a good choice for today.

I haven't seen any of your shenanigans in awhile. Looks like you are off to a good start, and now you got me wanting some collard greens.
 
Bbq’d snails? That’s just crazy

:shocked: :doh: Not so much on this first (in the last 15+ years) attempt. I'm going to whack that CorningWare into the toaster oven and cook 'em "traditionally."

I really like the idea... perhaps on the kettle with the Vortex, next time? Harass me if I mention Escargot and don't bring this up... killer idea.

Ribs are done with their wrap. Time to "boat" 'em and firm up the top a bit.
