I am venturing into the catering and food truck world and I am researching a cooker to buy. What do you all use?


Bonus question:


If you have a truck or trailer what does your set up look like/where do you cook your food? I am wondering if I need a patio on my trailer.

What does your health Dept say?

Do you need a NSF smoker?

Do you need a hood and/or for protection if you have smoker inside?
