Base Marinade or Brine Recipe
Folks~
I am looking for a good basic base marinade or brine recipe that I can start with. I did a search through the archives but nothing for a specific recipe came up. Perhaps I missed something? I am looking to cook a good chuck roast, possibly smoke it. Thanks, HHAG. |

I think most smoke their chuckies w/o mary-o-nate or brine. Maybe just some Montreal and smoke away.

I have done many chuckies and never brined any of them. I alway dry rub about 12 hours before cooking and then throw on more rub right before smoking. Here is a chuck roast I did a few weeks back, including a dry rub recipe.

I too question why you would want to marinate or brine such a flavorful cut of meat. Just rub that baby and throw it on the smoker.
