Pulled pork sold by the plate for 600 people
I have a gig coming up and it is for 600 people. They are bicylist pedaling across the state and they asked that I cater thier event. They wanted pulled pork sandwiches and Lays potato chips priced by the plate. I was figuring $6.00 per plate. Serving a 1/4 lb sandwich.
I was figuring 4 oz per person x 600 people = 2400 oz / 16 oz per lb = 150 lbs of meat. However that is cooked. I believe I need to add 30% for the bone and the fat cap of the Boston Butt. Would someone please tell me if I am on the right track and how many lbs of meat you would figure. I am needing a raw figure.

We figure a 50% yield on pork butt so you need 300 lbs of raw meat.

I usually get right at 60% yield. 250lbs of raw meat.

50%. Its better to have a small amount of leftover rather than not enough.

I cooked 151lbs of butts this weekend from Sams average weight of 7lbs raw. I weighed the product after pulled the pork and I had 74lbs of cooked pulled pork from 151lbs of raw butts so it was right on 50%.

We always factor pulled pork @ 50% yield. Much rather have left overs than run out, a few pounds of extra pork is cheaper than a reputation for running out.

We used to put on a spaghetti feed for a two day bicycling event and those boys could eat. Man o man they would put down two heaping 9" plates of spaghetti along with garlic bread and a 9" plate of salad, no joke. If I were you I would get ahold of them and ask them about how many carbs are they thinking per serving as well, you will be surprised but they will give you a pretty quick and exact figure and I would try to factor that in for them as well and adjust your price as well. They burn alot of carbs and want them replaced for fuel to continue to perform.

Just cooked for some vets bicycling across the U.S., boy can they pack in the food. I sure would have some pasta and garlic bread available, otherwise they will be chowing down on the pulled pork so fast it will vanish, otherwise you will need to up the serving size.

Like others have said....this isn't a group of people going out for
a bite to eat. They very athletic...and will EAT a lot of food; as they will be burning massive amounts of calories riding bikes. You might want to figure at least 2 sandwiches per person. Have plenty of Potato Salad & Beans Maybe go to Costco or Sam's Club and get a couple cases of big cookies to sell. And, did they really ask for Potato Chips? I would think they wouldn't want real salty stuff as it could dry them out. But; perhaps it helps them. Usually there is plenty of bottled water available for the riders...but; it might not hurt to have LOTS of bottled water to sell. Unless they will be giving water away right where you are set up. Also; will you be the only person selling food? What about all the support people for the riders...will they be buying from you too? And what about the spectators...will you be selling to them also? You could easily be looking at 2000 people or more.
