Made some Bak Kwa, also known as Chinese pork jerky. This is a popular snack for Chinese New Year celebrations

1 lb ground pork
1 tbsp soy sauce
1 tbsp fish sauce
1 tbsp sweet soy sauce (kecap manis)
1 tsp of Q-Salt
1 tsp five spice powder
1⁄2 tbsp oyster sauce
1/2 tbsp sugar
1 1⁄2 tbsp honey
Sesame seeds

Mix soy sauce, fish sauce, sweet soy sauce, salt, pepper, five spice powder, oyster sauce and sugar to minced meat. It should have a sticky texture once it is thoroughly mixed.

Flatten meat on a piece of baking paper with a rolling pin. Heat oven or grill (indirect) at 350F and bake meat for 15 minutes. Flatten meat on a piece of baking paper with a rolling pin. Heat oven to 350F and cook meat for 15 minutes.

Remove juice rendered from the meat and turn it over. Bake for another 15 minutes.

Transfer meat onto a new piece of baking paper. Brush the mixture of honey and hot water onto the surface of the meat. Place on grill directly over heat and cook for 5-10 minutes. Then, turn meat over to apply honey.
Cook for a further 5-10 minutes.

It was a fun cook. I can see many possibilities for this.

It is merely seasoned ground pork flattened in a sheet and cooked

Which seasonings or marinades that are used are completely open

Breakfast pork jerky made with bacon ground and cheese ground in.

Spicy pork jerky with Hot Salt or Oakridge HDD

The key is to double cook it (indirect and direct) to get that little bit of char and crispiness.

This was crispy like a cracker
 
Interesting. I'm going to subscribe to this thread and see what the Brethren come up with in variations. Looks like a simple must try. Any thought on cooking it on the Blackstone?
