187-Well that’s what it says. Cooked in and around a 2 mi urban hike and a 1:30 bike ride. Put the Boston Butt on the cooker at 0800 then in the cooler around 1:40pm reading 203*. Temp continued to climb a little, not much. Left out on bike just returned to the Magic Numbers. Not 11:11, but 187. Sure is a pretty butt. Natural juices, black coffee and a blue can of Chipotle Peppers with sauce. No Mexican Cola this time.
