Those are some pretty spectacular ribs John. I have seen sausage hung a lot. Is there a benefit to hanging? Thanks

It's been a while now but I put a cart together with like $50 worth of sausage and shipping was around $80. Just couldn't justify it. It is awesome though. A friend brought me back some from FL a couple of years ago.
