I bought a tri-tip at a local butcher I don't get to much on Saturday. $10.99 a pound, and when I unwrapped it I found it had a fat cap like a brisket. In a 2.6 pound piece I had over half a pound of fat. Kind of ticked me off, as all the other ones I have bought around here at $8-10 a pound have been trimmed.
How do they come where you are, and for how much?
I wrote them a polite email asking about it to see if it was an oversight on their part and they have not answered, which is disappointing.
