Pulled pork vac sealed, how long can I keep in fridge.
Title says it all. I'm having a party at the month and wondered if I could keep it in the refrigerator vacuum sealed until the party, or should it go in the freezer? I cooked the pork early so I can just cook brisket in the day of the party. Thanks.

I'd definitely freeze it, three weeks is way too long to keep it refrigerated.

Properly cooled and handled cryovac pork can stay in the refrigerator for 30 days. This is following all proper methods. If you do not follow them freeze.

I know some folks will disagree, but when I plan on freezing pork, I pull in decent size chunks, flash freeze and vacuum seal. To reheat, I let the frozen package sit out for a couple hours, than reheat using a double boiler.
Meat is not mushy, and still have great texture and flavor. If I pull the pork while still hot (or very warm), it will still have a lot of the moisture. wallace

Freezer freezer freezer, if you are storing it for more than two days, I would freeze. It does not take that long to thaw after already cooked.
